2 Hour Freezer Prep: Jambalaya, Black Bean Soup, Potato Soup, Bread, Ham

I decided to take advantage of a clean kitchen this morning and do a spur of the moment freezer cooking session.  Today kicks off six weeks of running non-stop and I needed to get some quick fix foods in the freezer to eliminate frozen pizzas and dining out.

I really like to prep ‘kits’ instead of full meals for several reasons.  They take up less room in the freezer, they taste fresher when reheated, and they leave some wiggle room in what you can prep.  My kits usually consist of raw or partially cooked meat and veggies that can be quickly added to rice, pasta, or potatoes.

Here’s what I accomplished:

  • 3 Gallons of Black Bean Soup
  • 10 Jambalaya Kits (ham, chicken, celery, garlic, bell pepper, onion)
  • 20 Packages of Shaved Ham (approx 3/4 lb packages- each will provide a week’s worth of lunches or an evenings worth of dinner)
  • 7 Packages of Diced Ham
  • 5 Potato Soup Kits (ham, celery, onion, carrots)
  • 3 Sante Fe Wrap Kits (onion, bell pepper, garlic, black beans, corn)
  • 6 Loaves of Wheat Bread

Ingredient List (recipes to follow soon):

  • 2 lbs dry black beans: $1.44
  • 2 lbs celery: $1
  • 20 lbs of ham: $40
  • 5 lbs of Zaycon chicken: $7.00
  • 3 lbs of onion: $1
  • 3 bell peppers: $1.50
  • 2 cans whole kernel corn: $1
  • 1 can diced tomatoes: 50¢
  • 1 can tomato sauce: 25¢
  • 1/4 lb carrots: 15¢

Total cost for all meal kits:  $53.84

The cost will go up slightly when adding items such as rice and tomatoes to jambalaya, milk/butter/potatoes to soup kit, and tortillas to Sante Fe Wraps.

Preparing Boneless Ham

Ham is one of my favorite things to freeze.  It freezes extremely and is very versatile.  Prices on ham drop around Christmas and Easter, so both are great stockup times for both boneless and bone-in hams.

This week, our local stores offered Kretschmar boneless hams for $1.99/lb.  These are the same hams you’ll get out of the deli and are just 1/3 the cost!  Most stores will slice this for free or a minimal fee.  I own this slicer and I prefer to do my own so that I can cut it exactly as I want it (I also use this for jerky during deer season).

To slice, simply trim off the round ends and cut to desired thickness.  Remember, with most things, the thinner you cut it, the further it will stretch.  I bag the sliced portions in weekly portions for my husband’s and son’s lunches.  I chunk the remainder for salads and meal kits (such as potato soup and jambalaya) for easy weeknight meals.

It takes me about 10 minutes to package and slice 20 lbs of ham.  This saves us a fortune because we purchase ham every week, and often have to resort to paying regular deli prices or even buying pre-packaged meats if our deli is closed.
